Orange soft cake with extra virgin oil

INGREDIENTS FOR A PIE TO 24 CM

3 eggs
250 g  mix of flour and corn starch
1 sachet of vanilla baking powder
170 g cane sugar
70 g  extra virgin olive  oil
Grated peel of 1 orange
2 oranges juice

PREPARATION

In a bowl with high edges, beat eggs and sugar with an electric mixer until you get a light and fluffy mixture. Dilute with oil and continue mixing. Grate the peel of an orange and squeeze the juice of 2 oranges, then add everything to the mixture. Sift the flour with the baking powder and, using a palette knife, add them gradually. Cover the tray with baking paper, pour in the dough and bake in preheated oven at 180° for 40 minutes.
