Plumcake with kamut, apples and oat bran

A simple and healthy plumcake realized only with kamut flour and sweet golden apples. A sprinkle of oat bran on the surface gives a pleasant crunchy note.

INGREDIENTS

200g. Kamut flour
80 g. sugar
2 golden apples
2 eggs
½ sachet of vanilla baking powder
50g. almonds
80g. milk
lemon juice
2 spoons of oat bran

PREPARATION

Wash the apples thoroughly and cut them into thin slices. Put them in a bowl and spray them with lemon juice.
Chop the almonds with 30g of sugar and mix them with the Kamut flour and yeast.
Whip the eggs for a long time with the remaining 50g of sugar until you obtain a clear and well swollen compound.
Add little by little the dried ingredients to the eggs, incorporating them well and alternating them with milk.

Finally add ¼ of the cut apples and mix.
Grease a plumcake mold and pour in the dough. Level it and arrange the apples slices  in a row. Spread the oat bran, and if you wish, some sugar.

Bake in preheated static oven at 180° for 40 minutes, lowering the temperature if the cake darkens too much. It’s worth the stick test.

Bake and leave to warm.
